- 15oz can of Chickpeas, drained, and rinsed
- 2 TBS Avocado Oil Mayonnaise
- 2 Stalks Celery, chopped fine
- 1 tsp Onion Powder
- Salt and Pepper to taste
*If making into sandwiches, then also two slices of sourdough bread and a handful of mixed greens)
1. Drain and rinse chickpeas and add them to a large bowl. Using a fork, partially mash the chickpeas. Note: 2. I like my chickpea salad with some of the chickpeas smashed and some still whole.
3. Add the celery, avocado oil mayonnaise (just mayo made with avocado oil), onions powder, salt and pepper to a bowl and mix.
4. Enjoy between slices of bread, on top of a salad, or just simply on its own!
TIP: We LOVE to eat ours as a sandwich between two slices of homemade sourdough! We then add in some homemade bread and butter pickles and fresh spinach into the sandwich!!
